Most people have a chili recipe that they use weekly and cook in big batches. Well, this one is mine!
It’s tasty, full of flavor, and lasts great in the fridge. Every time I make this I have lunch and dinner done for me for at least a couple of days ahead of time.
You can even freeze it and microwave it if you’re in a pinch for something fast and convenient. I’ve tried a number of low carb chili and this one turned out to be my favorite. Not many use curry powder, but I am a huge fan of it.
The Preparation
- 1 tablespoon butter
- 1 tablespoon coconut oil
- 1 medium onion, diced
- 1 medium green bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 tablespoon fresh garlic, minced
- 16 ounces ground hot italian sausage
- 16 ounces ground beef
- 10 ounces canned tomatoes with jalapeno and cilantro, like Organic 365
- 1 teaspoon onion powder
- 2 tablespoons chili powder
- 2 tablespoons curry powder
- 2 tablespoons cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
The Execution
1. Grab a big pan and set to medium-high heat. Add the butter and coconut oil, and let it melt.
2. In the pan, add the onion, peppers, and minced garlic. Let them saute down, stirring often.
3. Grab a pot, set to medium heat, and add the hot sausage and ground beef.
4. Cook this until browned, adding salt and pepper to taste.
7. Add the onion, peppers, and garlic to the pot with the ground beef and sausage.
8. Add canned tomato, onion powder, and chili powder.
9. Let this cook for 20 minutes.
10. Add curry powder and cumin, and let cook for another 10 minutes stirring often.
11. Let simmer for 45 minutes to 2 hours, depending on how thick you want it to be.
This makes a total of 5 servings of Beanless Low Carb Chili Con Carne. Each serving comes out to be 646 calories, 49.6g fats, 10.4g net carbs, and 35.4g protein.

What size is the can of tomato sauce you used?
It was a 16oz can, but you can use less if you need depending on your macro intake.

Thank you for this recipe. I love chili with the fiery passion of a thousand burning suns, and this is my new favorite chili recipe! It’s pretty much perfect with the addition of a generous amount of sriracha sauce.
Is the Curry Indian or Thai?

No, you keep the fat from the meat in the pan.
Many people have the old-school training of “DRAIN OFF THE MEAT FAT” in recipes… which has been 100% wrong, especially for Ketosis… what they needed to leave out was regular high carb beans! (I use 1g net carb per 1/2 cup Organic Black Soy Beans by Eden)

I love this website. I have never made anything here, that I didn’t like. Just finished up the chili and it’s amazing.
FOUND BEANS–I’ve used ORGANIC BLACK SOY BEANS by Eden, 1 Net CARB PER SERVING! 3.5 servings per can (do not drain as contains healthy Kombu seaweed). Full cans!
Serving size: 1/2 cup. 120 Calories.
Total fat 6g. 1g saturated. No cholesterol. 30g sodium. 310mg potassium.
Total carbs 8g. Dietary fiber 7g. Sugar 1g. Protein 11g.
I bought 12 cans at Amazon. They don’t seem to carry at WholeFoods, even though they have all other EDEN canned beans and part of Amazon company now. There are tan Organic Soy Beans in the dry bin sections of stores, but those are about 7g net per dry ounce, and don’t know what amount that is when cooked, but ORGANIC is Key (as soy is almost 90%+ GMO version crop grown variety).
Would it be possible to make this in a crock pot?
Definitely – a few hours on low would do it. If you aren’t pre-cooking the beef, I’d say a few hours on high 🙂

Yes, you can make it in the Instant Pot. After step 10, just cook it on high pressure for 15 to 30 min.
